Traditional Lebanese Tomato and Cucumber Salad

Ingredients
  

Salad

  • 1.5 lbs Ripe Tomatoes around 3-4 medium or 6-8 Roma tomatoes
  • 0.5 Small Red Onion finely diced
  • 0.5 cup Fresh Parsley finely chopped (flat-leaf/Italian preferred)
  • 0.25 cup Fresh Mint finely chopped
  • 1 Cucumber medium, peeled (optional) and diced

Dressing

  • 3 tablespoons Extra Virgin Olive Oil
  • 2 tablespoons Fresh Lemon Juice from about 1 small lemon
  • 0.5 teaspoon Salt or to taste
  • 0.25 teaspoon Black Pepper or to taste

Instructions
 

Preparation

  • Wash and dry the tomatoes, core and cut into bite-sized wedges or cubes.
  • Finely dice the red onion, parsley, and mint. Peel and dice the cucumber if using.

Assembly

  • In a large bowl, combine the prepared tomatoes, red onion, parsley, mint, and cucumber.
  • In a separate small bowl, whisk together the olive oil, lemon juice, salt, and black pepper until well combined.

Finishing

  • Pour the dressing over the vegetables and herbs, then gently toss to coat everything evenly.
  • Taste and adjust seasoning if needed, then serve immediately or let sit for 10-15 minutes for flavors to meld.

Notes

For best results, use the freshest ingredients available. Adjust lemon juice and salt to your personal preference.
