  • 2-3 medium, ripe avocados
  • 0.5 lb cooked, peeled, and deveined shrimp (small to medium size)
  • 4 slices your favorite artisan bread, sourdough, or whole grain
  • 1 whole lemon

Instructions
 

Preparation

  • Pat the shrimp dry, then toss them with olive oil, salt, pepper, and optional garlic powder and smoked paprika. For extra flavor, quickly sear the seasoned shrimp in a hot pan for 1-2 minutes per side until slightly golden, then set aside.

Avocado Mash

  • Cut avocados in half, remove the pit, and scoop out the flesh into a bowl. Mash the avocado to your desired consistency, then mix in the juice of half a lemon, a pinch of salt, and a dash of black pepper.

Toasting Bread

  • Heat a skillet or preheat a toaster/oven, then lightly toast bread slices until golden and slightly crispy. Optionally, drizzle the toasted bread with a little olive oil for added flavor.

Assembly

  • Spread the mashed avocado generously onto each slice of toasted bread, then arrange the seasoned shrimp on top. Drizzle with extra olive oil and fresh lemon juice, then sprinkle with cilantro or parsley and red pepper flakes to taste.

Notes

Adjust the amount of red pepper flakes to控制 your desired level of spice. For a creamier avocado mash, use very ripe avocados. Keep an eye on the shrimp while searing to prevent overcooking, as they can become tough easily.
