  • 1 lb shrimp peeled and deveined
  • 3 cloves garlic minced
  • 0.5 tsp red pepper flakes or to taste
  • 5 oz fresh spinach
  • 0.25 cup chicken or vegetable broth
  • 1 tbsp lemon juice
  • Salt and freshly ground black pepper to taste

Cooking Steps

  • Heat olive oil in a large skillet over medium-high heat.
  • Add the shrimp to the skillet and cook for 1-2 minutes per side until they turn pink and opaque.
  • Stir in the minced garlic and red pepper flakes, cooking for 30 seconds until fragrant.
  • Add the spinach and broth to the skillet; cook and stir until the spinach wilts, about 1-2 minutes.
  • Remove the skillet from heat, then stir in the lemon juice and season with salt and pepper to taste; serve immediately.

Notes

For extra flavor, you can add a splash of white wine with the broth. Adjust red pepper flakes to your preferred spice level.
