  • 1 red bell pepper, cored and thinly sliced or diced
  • 1 cup sliced cremini mushrooms
  • 1/2 medium zucchini, halved lengthwise and sliced
  • 2 cloves garlic, minced
  • 1 tsp dried Italian seasoning
  • 1/2 tsp salt or to taste
  • 1/4 tsp black pepper or to taste

Preparation

  • Cut the chicken into 1-inch cubes and prepare all vegetables by chopping broccoli into florets, slicing bell pepper, mushrooms, and zucchini, and mincing the garlic.
  • This preparatory step ensures a quick cooking process.

Cooking

  • Heat olive oil in a large skillet over medium-high heat until it shimmers.
  • Add chicken to the skillet and cook for 5-7 minutes, stirring occasionally, until browned and mostly cooked through.
  • Remove the chicken and set it aside.
  • Add broccoli and bell pepper to the same skillet, cooking for 3-5 minutes until slightly softened.
  • Stir in mushrooms, zucchini, and minced garlic; season with Italian seasoning, salt, and pepper.
  • Cook for another 3-4 minutes until mushrooms release liquid and zucchini is tender-crisp.
  • Return chicken to the skillet, combine with vegetables, and heat through for 1-2 minutes until thoroughly cooked.
  • Remove from heat and garnish with fresh parsley, cilantro, or a squeeze of lemon juice if desired before serving immediately.
