  • Beat softened cream cheese in a large bowl with an electric mixer until smooth and fluffy.
  • Add powdered sugar, vanilla, almond (if using), and peppermint extracts, then beat until smooth.
  • In a separate cold bowl, whip heavy cream until stiff peaks form.
  • Gently fold the whipped cream into the cream cheese mixture until just combined.

  • Pour the cheesecake filling over the chilled cookie crust and spread it evenly.
