Ingredients
  

Puff Pastry

  • 1 sheet frozen puff pastry thawed

Apple Filling

  • 1 large apple such as Granny Smith or Honeycrisp, peeled, cored, and finely diced
  • 2 tablespoons granulated sugar plus more for dusting
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon nutmeg optional
  • 1 tablespoon lemon juice

For Assembly

  • 1 tablespoon unsalted butter melted
  • 1 large egg whisked with 1 tablespoon water (for egg wash)

Instructions
 

Preparation

  • Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
  • In a medium bowl, combine the diced apple, 2 tablespoons granulated sugar, cinnamon, nutmeg (if using), and lemon juice, then mix well.

Assembly

  • Unfold the thawed puff pastry on a lightly floured surface or parchment paper, then cut it into four equal squares.
  • Brush the edges of each pastry square with melted butter and place a spoonful of apple filling onto one half, leaving a small border.
  • Fold the other half of the pastry over the filling to form a triangle and crimp the edges firmly with a fork to seal.
  • Transfer the turnovers to the prepared baking sheet, brush the tops with egg wash, and sprinkle with extra granulated sugar.

Baking

  • Bake for 18-22 minutes, or until the pastry is puffed and deeply golden brown.
  • Let the turnovers cool slightly on a wire rack before serving.

Notes

For best results, make sure your puff pastry is completely thawed but still cold before working with it. This will prevent it from becoming too sticky and difficult to handle. You can also experiment with different fruit fillings like berries or peaches.
