  • 1 pound Ground Beef leaner varieties work well here
  • 1 tablespoon Olive Oil
  • 1 medium Onion chopped
  • 2 cloves Garlic minced
  • 1 packet Taco Seasoning or 2 tablespoons homemade
  • 1/2 cup Water or Beef Broth
  • 3 cups Cooked Rice white, brown, or cauliflower rice all work wonders
  • 1 15-ounce can Black Beans rinsed and drained
  • 1 cup Corn frozen, canned, or fresh
  • 1/2 cup Salsa your favorite kind
  • 1 cup Shredded Cheese Cheddar, Monterey Jack, or a Mexican blend
  • 1 Avocado diced or sliced

Optional Toppings

  • Sour cream or Greek yogurt
  • fresh cilantro
  • lime wedges
  • jalapeƱos
  • crushed tortilla chips

Instructions
 

Preparation

  • Heat olive oil in a large skillet over medium-high heat and cook chopped onion until softened (3-4 minutes).
  • Add ground beef to the skillet, break it apart, and cook until fully browned; drain excess fat.
  • Stir in minced garlic, cook for one minute, then add taco seasoning and water/broth; simmer for 5-7 minutes until thickened.
  • Optionally, warm black beans and corn by stirring them into the beef mixture for the last few minutes.
  • Divide cooked rice among serving bowls.
  • Top the rice with seasoned ground beef, black beans, and corn.
  • Add salsa, shredded cheese, and diced or sliced avocado.
  • Garnish with desired toppings like sour cream, cilantro, lime, or tortilla chips, then serve immediately.

Notes

For a healthier option, use lean ground beef and cauliflower rice. Adjust spice level by adding more or less taco seasoning or jalapeƱos. Leftovers can be stored in an airtight container in the refrigerator for up to 3 days. Reheat gently before serving.
