Ingredients
  

Main Ingredients

  • 1 lb raw shrimp peeled and deveined (medium or large)
  • 2 ripe avocados diced
  • 1 pint cherry tomatoes halved
  • 1 English cucumber diced
  • 1/4 cup red onion finely diced
  • 1/4 cup fresh cilantro chopped

For the Dressing & Seasoning

  • 3 tbsp fresh lime juice (from 2-3 limes)
  • 2 tbsp extra virgin olive oil (plus 1 tbsp for cooking shrimp)
  • 1 clove garlic minced (optional)
  • Salt to taste
  • Black pepper to taste
  • red pepper flakes Pinch (optional)

Instructions
 

Cooking the Shrimp

  • Heat 1 tablespoon of olive oil in a large skillet over medium-high heat.
  • Add shrimp, season with salt and pepper, and cook for 2-3 minutes per side until pink and opaque. Remove and cool slightly.

Preparing the Dressing

  • Whisk together lime juice, 2 tablespoons olive oil, minced garlic (if using), salt, and pepper in a small bowl. Adjust seasonings to taste.

Chopping the Vegetables

  • While the shrimp cools, dice the avocados, halve the cherry tomatoes, dice the cucumber, and finely dice the red onion.

Assembling and Serving

  • Combine cooled shrimp, diced avocado, halved cherry tomatoes, diced cucumber, finely diced red onion, and chopped cilantro in a large mixing bowl.
  • Pour the dressing over the ingredients, gently toss until well combined, and serve immediately.

Notes

For extra flavor, marinate the shrimp in a little lime juice and garlic before cooking. You can also add some grilled corn or black beans for a heartier meal.
