  • 1 lb extra-lean ground turkey
  • 1 tbsp olive oil
  • 1 large onion chopped
  • 3 cloves garlic minced
  • 1 red bell pepper chopped
  • 1 zucchini chopped
  • 1 can diced tomatoes (14.5 oz), no added salt, undrained
  • 1/2 cup low-sodium chicken broth
  • 1 tsp dried oregano
  • 1/2 tsp ground cumin
  • 1/4 tsp paprika
  • Salt and freshly ground black pepper to taste
  • 1/4 cup fresh parsley chopped
  • 2 tbsp fresh lemon juice

Cooking Steps

  • Heat olive oil in a large skillet over medium-high heat, then cook ground turkey until no longer pink, breaking it apart, for about 5-7 minutes.
  • Drain excess fat, then add chopped onion, minced garlic, red bell pepper, and zucchini to the skillet and sauté for 5-7 minutes until softened.
  • Stir in diced tomatoes, chicken broth, oregano, cumin, and paprika, bringing the mixture to a simmer.
  • Reduce heat to medium-low, cover, and cook for 10-15 minutes until vegetables are tender and flavors are melded.
  • Remove from heat, then stir in fresh parsley and lemon juice.
  • Taste and season with salt and pepper as needed, then serve warm.

Notes

Serve this skillet meal on its own, or with a side of quinoa or brown rice for a more complete meal. The fresh lemon juice at the end really brightens up all the flavors!
