  • 1 cup cooked quinoa
  • 1/2 cup canned chickpeas rinsed and drained
  • 1/4 cup cherry tomatoes halved
  • 1/4 cup cucumber diced
  • 1/4 cup red onion thinly sliced
  • 1/4 cup crumbled feta cheese
  • 2 tablespoons fresh parsley chopped
  • 1 tablespoon fresh mint chopped

Dressing

  • 2 tablespoons olive oil
  • 1 tablespoon fresh lemon juice
  • 1/2 teaspoon dried oregano
  • Salt and black pepper to taste

Instructions
 

Preparation

  • In a large bowl, combine the cooked quinoa, chickpeas, cherry tomatoes, cucumber, red onion, feta cheese, parsley, and mint.
  • In a small bowl, whisk together the olive oil, lemon juice, oregano, salt, and pepper to create the dressing.

Assembly

  • Pour the dressing over the quinoa and vegetable mixture.
  • Toss gently to ensure all ingredients are well coated.
  • Serve immediately or refrigerate for later enjoyment.

Notes

For extra flavor, you can roast the chickpeas before adding them to the bowl.
