  • 1 tbsp olive oil
  • 1 lb lean ground turkey
  • 1 medium onion chopped
  • 2 cloves garlic minced
  • 1/2 cup pitted Kalamata olives halved
  • 1/4 cup capers drained
  • 1 can (14.5 oz) diced tomatoes undrained
  • 1/2 cup chicken or vegetable broth
  • 1/2 lemon zest and juice
  • 1 tsp dried oregano
  • 1/2 tsp dried basil
  • red pepper flakes optional
  • 12 oz pasta of choice e.g., penne, rotini
  • 1/2 cup crumbled feta cheese
  • Fresh parsley chopped (for garnish)
  • Salt and black pepper to taste

Instructions
 

Preparation

  • Cook pasta in a large pot of salted boiling water until al dente, then drain and reserve about 1 cup of pasta water.
  • Heat olive oil in a large skillet, add ground turkey and cook until no pink remains; drain excess fat.
  • Add chopped onion to the skillet and cook until softened, then stir in minced garlic and cook until fragrant.

Simmer and Combine

  • Add olives, capers, diced tomatoes, broth, lemon zest and juice, oregano, basil, and red pepper flakes to the skillet; simmer for 10-15 minutes to meld flavors.
  • Stir in the cooked pasta and crumbled feta cheese into the sauce, adding reserved pasta water if needed to reach desired consistency, then season with salt and pepper.
  • Garnish with fresh chopped parsley and serve immediately.

Notes

For extra brightness, add a squeeze of fresh lemon juice just before serving. If you prefer a spicier dish, increase the amount of red pepper flakes to your liking.
