  • 1 tbsp olive oil
  • 1 lb lean ground turkey
  • 1 large onion finely chopped
  • 3 cloves garlic minced
  • 1 (28 oz) can crushed tomatoes
  • 1/2 cup chicken broth
  • 1/2 cup sun-dried tomatoes (oil-packed), drained and chopped
  • 1/2 cup Kalamata olives pitted and sliced
  • 1 tsp dried oregano
  • 1/2 tsp dried basil
  • 1/4 tsp red pepper flakes (optional, for a kick)
  • Salt and black pepper to taste
  • 1 lb penne pasta
  • 1/2 cup crumbled feta cheese for serving
  • Fresh parsley chopped, for serving

Cooking Instructions

  • Cook the penne pasta in a large pot of salted boiling water according to package directions until al dente; reserve 1 cup of pasta water and then drain.
  • Heat olive oil in a large skillet or Dutch oven, add ground turkey, and cook until browned, then drain any excess grease.
  • Add chopped onion and minced garlic to the same skillet; sauté until softened and fragrant.
  • Stir in crushed tomatoes, chicken broth, sun-dried tomatoes, Kalamata olives, oregano, basil, and red pepper flakes; simmer for 15-20 minutes, then season with salt and pepper.
  • Add the cooked pasta to the sauce, coating evenly; if needed, add reserved pasta water to reach desired consistency, then serve topped with feta and parsley.

Notes

For an extra touch of freshness, you can add a squeeze of lemon juice at the end.
