  • 1.5 lbs hot Italian sausage
  • 3 large bell peppers red, yellow, orange, seeded and sliced
  • 1 large red onion sliced
  • 1 can crushed tomatoes (28 ounce)
  • 1 can diced tomatoes (15 ounce, undrained)
  • 3 garlic cloves, minced
  • 1 teaspoon dried oregano
  • 0.5 teaspoon dried basil
  • 0.5 cup Kalamata olives pitted and halved
  • 2 tablespoons red wine vinegar
  • Salt and black pepper to taste

For Serving (Optional)

  • Quinoa or couscous
  • Fresh parsley or crumbled feta cheese

Instructions
 

Preparation

  • Brown the Italian sausage in a large skillet over medium-high heat for 5-7 minutes, breaking it into pieces, then drain excess grease.

Slow Cooking

  • Transfer the browned sausage to your slow cooker and add the sliced bell peppers, red onion, and halved Kalamata olives.
  • Pour in the crushed tomatoes and diced tomatoes, then add the minced garlic, dried oregano, dried basil, red wine vinegar, and season with salt and pepper.
  • Stir all ingredients gently to combine and ensure they are well coated in the tomato mixture.
  • Cover and cook on low for 6-8 hours or on high for 3-4 hours, until the sausage is cooked and vegetables are tender.
  • After cooking, taste and adjust the seasonings as needed.

Serving

  • Ladle the sausage and peppers over quinoa or couscous, and garnish with fresh parsley or crumbled feta cheese if desired.

Notes

Serve with a side of crusty bread to soak up the delicious sauce, or enjoy it as a hearty stand-alone meal. This dish is also great for meal prepping!
