Ingredients
  

For the Chicken

  • 1 lb boneless, skinless chicken breasts or thighs, cut into 1-inch pieces
  • 2 tbsp olive oil
  • 1 tbsp dried oregano
  • 1 tsp dried thyme
  • 1/2 tsp garlic powder
  • Salt to taste
  • Black pepper to taste

For the Vegetables

  • 1 large red bell pepper, thinly sliced
  • 1 large yellow bell pepper, thinly sliced
  • 1 small red onion, thinly sliced
  • 1 cup cherry tomatoes, halved
  • 1/2 cup Kalamata olives, pitted and halved optional

For the Sauce

  • 2 tbsp fresh lemon juice
  • 1 tbsp olive oil
  • 1 tsp dried oregano
  • 1/2 tsp red pepper flakes optional
  • 1/4 cup chopped fresh parsley for garnish

Instructions
 

Marinate the Chicken

  • Combine chicken pieces with olive oil, oregano, thyme, garlic powder, salt, and pepper in a bowl. Toss to coat and let marinate for at least 10 minutes while preparing vegetables.

Cook the Chicken

  • Heat a large skillet or wok over medium-high heat with a splash of olive oil. Add marinated chicken in a single layer and cook for 3-5 minutes per side until browned and cooked through. Remove chicken and set aside.

Sauté the Vegetables

  • Add a drizzle of olive oil to the same pan if needed. Sauté sliced red and yellow bell peppers and red onion for 3-5 minutes until softened but still slightly crunchy.

Combine and Finish

  • Return cooked chicken to the pan with vegetables. Add halved cherry tomatoes and Kalamata olives.

Make and Dress the Sauce

  • Whisk together lemon juice, olive oil, oregano, and red pepper flakes in a small bowl. Pour the sauce over the stir fry, tossing gently to combine and heat through for 1-2 minutes.

Garnish and Serve

  • Remove from heat, sprinkle with fresh chopped parsley, and serve immediately.

Notes

For extra flavor, you can marinate the chicken for up to 30 minutes. If you prefer a milder dish, omit the red pepper flakes. This stir fry is delicious served on its own or with a side of quinoa or couscous.
