Ingredients
  

Grains

  • 1 cup white Basmati rice
  • 2 cups water or vegetable broth

Proteins

  • 2 boneless, skinless chicken breasts about 1 lb total, cut into 1-inch cubes
  • 1 tsp dried oregano
  • 1/2 tsp garlic powder
  • Salt and black pepper to taste
  • 1 tbsp olive oil

Vegetables

  • 1 large cucumber diced
  • 1 pint cherry tomatoes halved
  • 1/2 red onion thinly sliced
  • 1/4 cup Kalamata olives halved
  • 1/4 cup fresh parsley chopped

Flavor Boosters & Sauces

  • 1/2 cup store-bought hummus
  • 2 tbsp lemon juice
  • 1 tbsp olive oil for dressing
  • red pepper flakes optional

Garnish (optional)

  • Feta cheese crumbled
  • Toasted pine nuts
  • Extra fresh parsley

Instructions
 

Cooking Steps

  • Rinse rice, combine with water or broth in a pot. Bring to a boil, then simmer, covered, for 15-20 minutes until liquid is absorbed. Let stand, then fluff.
  • Pat chicken dry; toss with olive oil, oregano, garlic powder, salt, and pepper. Cook in a skillet over medium-high heat for 5-7 minutes until browned and cooked through.
  • Dice cucumber, halve cherry tomatoes, thinly slice red onion, halve Kalamata olives, and chop fresh parsley.
  • Whisk hummus, lemon juice, olive oil, and optional red pepper flakes. Thin with water if needed for a drizzling consistency.
  • Divide warm rice among bowls. Artfully arrange chicken, cucumber, tomatoes, red onion, and olives on top.
  • Drizzle hummus dressing generously over each bowl. Garnish with parsley, feta, or pine nuts as desired, and serve immediately.

Notes

For meal prep, store components separately and assemble just before serving to maintain freshness. Adjust red pepper flakes to your spice preference.
