  • 1.5 lbs boneless, skinless chicken thighs (about 4-6 thighs)
  • 1 large onion chopped
  • 2 garlic minced
  • 15 ounce diced tomatoes undrained
  • 1/2 cup low-sodium chicken broth
  • 1/4 cup pitted Kalamata olives halved
  • 1 bell pepper (any color) chopped
  • 1 zucchini chopped
  • 1 tablespoon dried oregano
  • 1 teaspoon dried thyme
  • 1/2 teaspoon black pepper
  • 1/4 teaspoon salt or to taste
  • 2 tablespoons fresh lemon juice
  • 1/4 cup fresh parsley chopped (for garnish)

Instructions
 

Preparation

  • Chop the onion, garlic, bell pepper, and zucchini; halve the Kalamata olives.

Cooking

  • Place the chicken thighs at the bottom of the slow cooker.
  • Layer all chopped vegetables over the chicken.
  • Whisk together diced tomatoes, chicken broth, oregano, thyme, black pepper, and salt in a separate bowl.
  • Pour the tomato-broth mixture and sprinkle halved olives over the chicken and vegetables.
  • Cook on LOW for 6-8 hours or HIGH for 3-4 hours until chicken is tender.

Finishing

  • Remove and shred chicken, then return it to the pot to mix with the sauce and vegetables.
  • Stir in fresh lemon juice, then garnish with chopped parsley and serve.

Notes

For extra flavor, lightly brown the chicken thighs before adding them to the crockpot. This recipe pairs well with quinoa, couscous, or a simple green salad.
