Main Ingredients

  • 4-6 oz salmon fillets skin on or off
  • 4-5 cups assorted vegetables broccoli florets, sliced bell peppers, asparagus spears, cherry tomatoes, zucchini, red onion wedges
  • 2 tbsp olive oil + extra for drizzling
  • lemon for zest and juice
  • 2-3 cloves garlic minced
  • 2 tbsp fresh dill chopped (or parsley)
  • Salt and black pepper to taste

Optional Ingredients

  • paprika Pinch of
  • 1/4 cup Kalamata olives
  • 1/4 cup artichoke hearts
  • 2 tbsp crumbled feta cheese added in the last 10 minutes

Instructions
 

Preparation

  • Preheat oven to 400°F (200°C).
  • Toss chopped vegetables on a baking sheet with olive oil, minced garlic, salt, pepper, and optional paprika. Spread them in a single layer.

Roasting & Baking

  • Roast vegetables for 15-20 minutes, until softened and slightly caramelized.
  • Pat salmon fillets dry and season with salt, pepper, and lemon zest.
  • Remove baking sheet, push vegetables aside, and place salmon in the center. Drizzle salmon with olive oil and lemon juice, then add remaining garlic.
  • Return to oven and bake for 12-18 minutes, until salmon flakes easily. If using, add olives, artichoke hearts, and feta now.
  • Garnish with fresh dill or parsley before serving.

Notes

For even cooking, ensure vegetables are in a single layer. The optional Mediterranean additions enhance the flavor profile significantly. Adjust cooking time for salmon based on thickness; cook to an internal temperature of 145°F (63°C).
