Zesty Lemon Herb Spring Vegetable Medley with Chicken

Chicken

  • 1 lb boneless, skinless chicken breasts, cut into 1-inch strips

Vegetables

  • 1 lb fresh asparagus, woody ends snapped off
  • 1 cup fresh snap peas
  • 1 cup fresh green peas (or frozen, thawed)
  • 1/2 cup fresh spinach

Flavorings

  • 1 tbsp olive oil (plus more for vegetables)
  • 1 clove garlic, minced
  • 1 lemon Zest of
  • 1 lemon Juice of (about 2-3 tbsp)
  • 2 tbsp fresh parsley, chopped
  • 1 tbsp fresh dill, chopped
  • Salt and freshly ground black pepper to taste
  • Parmesan cheese Optional: for serving

Cooking Chicken

  • Heat 1 tablespoon of olive oil in a large skillet over medium-high heat. Add chicken strips, season with salt and pepper, and cook for 5-7 minutes until golden brown and cooked through. Remove the chicken and set it aside.

Cooking Vegetables

  • Add a drizzle of olive oil to the same skillet, then sauté minced garlic for 30 seconds until fragrant. Add asparagus and snap peas, sautéing for 3-4 minutes until crisp-tender.
  • Stir in the green peas and spinach, cooking for an additional 1-2 minutes until the spinach wilts and the peas are heated.

Finishing the Dish

  • Return the cooked chicken to the skillet with the vegetables. Remove the skillet from heat.
  • Stir in lemon zest, lemon juice, fresh parsley, and fresh dill. Season generously with salt and freshly ground black pepper to taste.
  • Gently toss everything to combine and serve immediately, garnished with optional Parmesan cheese.

Notes

For extra flavor, marinate the chicken in a little lemon juice and herbs for 15-30 minutes before cooking. Ensure vegetables are cooked to your desired tenderness, but avoid overcooking to maintain their crispness. This dish is excellent served with quinoa or a light grain.
