  • 1 lb shrimp peeled and deveined, tails on or off
  • 1 tbsp olive oil
  • 2 garlic minced
  • 1/2 bunch asparagus tough ends trimmed, cut into 1-inch pieces
  • 1/2 lemon juice Juice of 1 lemon
  • 1/4 cup chicken broth
  • 1 tbsp fresh dill chopped
  • 1 tbsp fresh chives chopped
  • Salt and black pepper to taste
  • Red pepper flakes optional, for a kick

Preparation

  • Thaw and pat dry frozen shrimp, then season lightly with salt and pepper.
  • Heat 1 tablespoon of olive oil in a large skillet over medium-high heat.

Cooking

  • Add minced garlic and cut asparagus to the shimmering oil and sauté for 2-3 minutes until bright green and tender-crisp.
  • Add seasoned shrimp in a single layer and cook for 1-2 minutes per side until pink and opaque; cook in batches if necessary.
  • Pour in lemon juice and chicken broth, then stir in fresh dill and chives.
  • Cook for another 1-2 minutes, tossing gently, until the sauce reduces and coats the shrimp and asparagus, being careful not to overcook.

Serving

  • Remove from heat, adjust seasoning, and serve immediately, optionally with red pepper flakes.

Notes

Ensure shrimp is dry before cooking to get a good sear. Do not overcook the shrimp, as it can become tough quickly.
