  • 1 lb lean ground beef (90/10)
  • 1 tablespoon olive oil
  • 1 medium onion chopped
  • 3 cloves garlic minced
  • 1 cup dry orzo pasta
  • 2 cups chicken broth
  • 1/2 cup sun-dried tomatoes (oil-packed), drained and chopped
  • 1/2 cup fresh spinach
  • lemon Juice of 1/2
  • 1/4 cup fresh parsley chopped
  • 1 teaspoon dried oregano
  • Salt and black pepper to taste
  • Crumbled feta cheese for garnish (optional)

  • Heat olive oil in a large, oven-safe skillet over medium-high heat. Add ground beef and cook until browned, then drain excess fat.
  • Add chopped onion to the skillet and cook until softened, then stir in minced garlic and cook until fragrant.
  • Stir in orzo pasta, chicken broth, sun-dried tomatoes, and dried oregano; bring the mixture to a simmer.
  • Reduce heat, cover, and simmer for 10-12 minutes until orzo is cooked and liquid is absorbed, stirring occasionally.
  • Remove from heat, stir in fresh spinach until wilted, then add lemon juice and chopped fresh parsley.
  • Adjust seasoning with salt and pepper to taste, and serve hot, garnished with crumbled feta cheese if desired.

Notes

For extra flavor, you can add a pinch of red pepper flakes with the oregano. This dish is great served with a side salad or crusty bread.
