  • 1 tbsp olive oil
  • 1 lb boneless, skinless chicken breast cut into 1-inch pieces
  • 4 cups broccoli florets fresh or frozen
  • 1 red bell pepper thinly sliced
  • 2 garlic minced
  • 1 fresh ginger grated
  • lemon juice Juice of 1 lemon
  • 2 tbsp low-sodium soy sauce
  • 1 tsp dried Italian herbs or oregano/basil
  • red pepper flakes Pinch (optional, for a kick)

For Serving

  • Cooked quinoa or rice noodles for serving
  • Fresh cilantro chopped (for garnish)
  • Sesame seeds for garnish

Instructions
 

Preparation

  • Prepare your ingredients by cutting broccoli, slicing chicken and bell pepper, mincing garlic, and grating ginger. Whisk together lemon juice, soy sauce, Italian herbs, and red pepper flakes (if using) in a small bowl to create the sauce.

Cooking

  • Heat olive oil in a large skillet or wok over medium-high heat. Add chicken pieces and cook for 5-7 minutes until browned and almost cooked through; then remove chicken and set aside.
  • Add bell pepper and broccoli florets to the same pan, sautéing for 3-5 minutes until crisp-tender. Stir in minced garlic and grated ginger and cook for another minute until fragrant.

Combine & Serve

  • Return the cooked chicken to the pan with the vegetables, pour the lemon-herb sauce over everything, and toss to coat. Cook for 1-2 minutes until the sauce has slightly thickened and all ingredients are heated through.
  • Serve the stir-fry immediately over cooked quinoa or rice noodles, garnished with fresh cilantro and sesame seeds.

Notes

For extra flavor, marinate the chicken in a little soy sauce and lemon juice for 15-20 minutes before cooking. You can also customize the vegetables based on what you have on hand; snap peas, carrots, or mushrooms would also be delicious.
