  • 1.5 lbs boneless, skinless chicken breasts or thighs cut into 1-inch cubes

Marinade

  • ¼ cup olive oil
  • 3 tbsp fresh lemon juice
  • 2 cloves garlic minced
  • 1 tbsp chopped fresh parsley
  • 1 tsp dried oregano
  • ½ tsp salt
  • ¼ tsp black pepper

Coating

  • 2 tbsp cornstarch

Garnish

  • fresh lemon wedges
  • extra chopped parsley

Instructions
 

Preparation

  • Cut the chicken into uniform 1-inch cubes.
  • In a medium bowl, whisk together olive oil, fresh lemon juice, minced garlic, chopped fresh parsley, dried oregano, salt, and black pepper for the marinade.

Marinating and Cooking

  • Add chicken to the marinade, toss to coat, and marinate for at least 30 minutes, or up to 2 hours in the refrigerator.
  • After marinating, sprinkle cornstarch over the chicken and toss until lightly coated.
  • Heat a large non-stick skillet over medium-high heat with a little oil. Cook the chicken in a single layer for 3-4 minutes per side until golden brown and cooked through, in batches if necessary.

Serving

  • Transfer the cooked chicken to a serving platter, then garnish with fresh lemon wedges and extra chopped parsley.
  • Serve immediately.

Notes

For extra flavor, consider marinating the chicken overnight. These bites are delicious served with a side of rice or a fresh salad.
