  • 1 pound shrimp peeled and deveined (fresh or frozen, thawed)
  • 2 tablespoons olive oil
  • 4 garlic minced
  • 1/2 onion or shallot diced
  • 1/2 teaspoon red pepper flakes optional
  • 1/2 cup chicken or vegetable broth
  • 1/2 lemon juice
  • 2 tablespoons butter
  • 4 cups fresh spinach
  • salt and black pepper to taste
  • cooked pasta or rice for serving
  • fresh parsley or chives chopped, for garnish (optional)

Preparation

  • Thaw and pat dry the shrimp, then season it generously with salt and pepper.
  • Heat a large skillet over medium-high heat with olive oil.
  • Sauté the diced onion or shallot for 2-3 minutes until softened, then add minced garlic and red pepper flakes for 30-60 seconds until fragrant.
  • Sear the seasoned shrimp in a single layer for 1-2 minutes per side until pink and opaque, then remove and set aside.
  • Deglaze the pan with broth, scraping up browned bits, then stir in lemon juice and butter until melted and slightly thickened.
  • Add spinach to the pan and cook for 1-2 minutes until it wilts.
  • Return the cooked shrimp to the pan and toss to coat with the sauce.
  • Serve immediately over pasta or rice, garnished with fresh parsley or chives if desired.

Notes

For extra flavor, marinate the shrimp for 15 minutes in a little lemon juice and garlic before cooking. Adjust red pepper flakes to your spice preference. If serving with pasta, you can add a splash of pasta water to the sauce for extra creaminess.
