  • 1 lb Large shrimp, peeled and deveined fresh or thawed frozen
  • 2 tablespoons olive oil
  • 3 cloves fresh garlic, minced
  • 1 tablespoon lemon zest
  • 2 tablespoons fresh lemon juice
  • 1 teaspoon dried oregano or Italian seasoning blend
  • 1/4 teaspoon red pepper flakes optional
  • 1/2 teaspoon salt to taste
  • 1/4 teaspoon black pepper to taste
  • Fresh parsley or cilantro, chopped for garnish, optional

Preparation

  • Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
  • Ensure frozen shrimp are fully thawed and pat them dry.
  • Combine olive oil, minced garlic, lemon zest, lemon juice, oregano, red pepper flakes, salt, and pepper in a bowl.
  • Add shrimp to the marinade and toss until evenly coated.

Cooking

  • Spread the coated shrimp in a single layer on the prepared baking sheet.
  • Bake for 8-12 minutes, until pink and cooked through; avoid overcooking.

Serving

  • Remove from oven and serve hot, garnished with fresh parsley or cilantro if desired.

Notes

For best results, do not overcrowd the baking sheet; use a second one if needed to ensure even cooking.
