  • Gently pat the cod fillets dry with paper towels, then season both sides generously with salt and freshly ground black pepper.
  • Heat olive oil or coconut oil in a large skillet over medium heat. Add shallots and cook until softened, about 3-4 minutes, then add minced garlic and grated ginger and cook for another minute until fragrant.
  • Pour in white wine or vegetable broth, scraping up any browned bits from the pan. Simmer and reduce by about half, which takes 1-2 minutes.
  • Stir in full-fat coconut milk, fresh lemon zest, and red pepper flakes (if desired). Bring to a gentle simmer, then reduce heat to low and cook for 5-7 minutes to meld flavors and slightly thicken the sauce.
  • Nestle the seasoned cod fillets into the simmering sauce, ensuring they are mostly submerged. Cover the skillet and cook on low heat for 8-12 minutes, or until the cod is opaque and flakes easily.
  • Squeeze in fresh lemon juice. Taste the sauce and adjust seasonings as needed with more salt, pepper, or lemon juice. Ladle the cod and sauce onto plates and garnish with fresh cilantro or parsley before serving.

Notes

For extra flavor, you can marinate the cod in a little lemon juice and garlic for 15 minutes before cooking. Adjust the amount of red pepper flakes to your preferred spice level. Serve this dish with rice or a side of steamed vegetables for a complete meal.
