Instructions

  • Dry roast the rolled oats in a heavy-bottomed pan for 3-4 minutes over medium heat until lightly fragrant, then set aside.
  • Heat ghee or oil in a pressure cooker or heavy-bottomed pot, then add cumin seeds and asafoetida and let them splutter.
  • Sauté the chopped onion until golden brown, then add grated ginger and minced garlic, cooking for another minute.
  • Stir in the mixed vegetables and soaked moong dal, cooking for 2-3 minutes.
  • Add turmeric powder, red chili powder (if using), and salt, then mix well.
  • Pour in 3 cups of water and bring it to a boil.
  • Add the roasted oats to the pot and stir well to combine.
  • Cook for 2-3 whistles in a pressure cooker or simmer for 10-12 minutes in a pot until oats and dal are tender.
  • Allow pressure to release naturally or let it sit for a few minutes before opening the lid.
  • Garnish with fresh coriander and serve hot.

Notes

For extra flavor, you can add a pinch of garam masala along with the other spices. Adjust the consistency by adding more hot water if you prefer a thinner khichdi.
