  • 2 large ripe bananas
  • 1 ½ cups rolled oats certified gluten-free if needed
  • ½ cup sunflower seed butter nut-free alternative
  • ¼ cup unsweetened almond milk
  • ½ teaspoon ground cinnamon
  • 1 teaspoon vanilla extract
  • ½ cup fresh or frozen mixed berries blueberries, raspberries, finely chopped strawberries

Preparation

  • Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper or a silicone baking mat.

Mixing

  • Mash the ripe bananas thoroughly in a large mixing bowl until smooth.
  • Add sunflower seed butter, almond milk, cinnamon, and vanilla extract to the mashed bananas, then stir until fully incorporated.
  • Fold in the rolled oats and mixed berries, mixing until just combined without overmixing.

Forming and Baking

  • Optionally, chill the dough for 15-20 minutes for easier handling as this helps oats absorb moisture.
  • Scoop about 1-2 tablespoons of dough per cookie, roll into a ball, and gently flatten on the prepared baking sheet.
  • Bake for 12-15 minutes, or until edges are lightly golden and cookies are set.
  • Let cookies cool on the baking sheet for a few minutes, then transfer to a wire rack to cool completely.

Notes

These cookies are designed for toddlers, so they are not overly sweet. You can adjust the amount of berries or add a tiny pinch of sweetener if desired for older children or adults. Store in an airtight container at room temperature for up to 3 days, or freeze for longer storage.
