  • 1/4 cup cherry tomatoes, halved
  • 1/4 cup cooked chickpeas, rinsed and drained
  • 2 tablespoons crumbled feta cheese (optional, for flavor)
  • 1/4 avocado, sliced

Dressing

  • 1 tablespoon olive oil
  • 1 tablespoon lemon juice
  • 1/2 teaspoon dried oregano
  • Salt and black pepper to taste

  • If not already cooked, cook 1/2 cup dry quinoa according to package directions to yield 1 cup cooked quinoa, then fluff it with a fork.
  • In a large bowl, place the mixed leafy greens as the base of the power bowl.

Assembly

  • Arrange the cooked quinoa, chopped bell peppers, diced cucumber, halved cherry tomatoes, and cooked chickpeas over the greens.
  • Top the bowl with sliced avocado and crumbled feta cheese, if you are using it.
