Ingredients
  

For the Salad

  • 4 oz rice vermicelli noodles (thin type)
  • large cucumber julienned or spiraled
  • 2 medium carrots julienned or shredded
  • 1 red bell pepper thinly sliced
  • 1 cup shredded red cabbage
  • 1/2 cup fresh mint leaves roughly chopped
  • 1/2 cup fresh cilantro roughly chopped
  • 1/4 cup chopped roasted peanuts for garnish (optional)
  • 2 green onions thinly sliced, for garnish (optional)

For the Creamy Peanut Dressing

  • 1/2 cup creamy peanut butter
  • 3 tablespoons soy sauce (or tamari for gluten-free)
  • 2 tablespoons rice vinegar
  • 2 tablespoons honey or maple syrup
  • 1 tablespoon fresh lime juice
  • 1 tablespoon grated fresh ginger
  • 1 clove garlic minced
  • 1-2 tablespoons warm water as needed for consistency
  • 1/2 teaspoon sriracha or red pepper flakes (optional, for a kick)

Instructions
 

Prepare the Noodles

  • Bring water to a boil and cook rice vermicelli noodles according to package directions, typically 2-3 minutes; drain and rinse with cold water.
  • Set the prepared noodles aside.

Whisk the Dressing

  • In a medium bowl, whisk together peanut butter, soy sauce, rice vinegar, honey/maple syrup, lime juice, grated ginger, and minced garlic until smooth.
  • Add warm water incrementally to achieve a pourable consistency, then stir in sriracha or red pepper flakes if desired.

Assemble the Salad

  • Arrange drained vermicelli noodles in individual bowls or on a platter.
  • Artfully arrange julienned cucumber, carrots, sliced bell pepper, and shredded red cabbage around or on top of the noodles.

Add Fresh Herbs

  • Scatter chopped fresh mint and cilantro over the vegetables.

Serve

  • Drizzle generously with the creamy peanut dressing.
  • Garnish with chopped roasted peanuts and sliced green onions, if desired, then toss gently or allow individuals to toss their own portions.

Notes
