  • 2 (6 oz) salmon fillets fresh or thawed
  • 1 bunch asparagus woody ends trimmed
  • 1 cup cherry tomatoes
  • 1 lemon half sliced, half for juicing
  • 2 cloves garlic minced
  • 3 tbsp olive oil
  • 1/2 tsp dried dill
  • 1/4 tsp smoked paprika
  • Salt and freshly ground black pepper to taste
  • Fresh parsley or chives chopped, for garnish (optional)

Instructions
 

Preparation

  • Preheat your oven to 400°F (200°C) and prepare a large baking sheet.
  • Spread asparagus and cherry tomatoes on the baking sheet, drizzle with 1 tablespoon of olive oil, season with salt and pepper, and toss to coat.
  • In a small bowl, combine the remaining 2 tablespoons of olive oil, minced garlic, dried dill, and smoked paprika.
  • Pat salmon fillets dry, place them on the baking sheet, and brush generously with the oil-garlic-dill mixture, then season with salt and pepper.
  • Place two lemon slices on top of each salmon fillet.

Cooking & Serving

  • Roast for 15-20 minutes, or until the salmon is cooked and the asparagus is tender-crisp.
  • Remove from the oven, squeeze fresh lemon juice over the salmon and vegetables, and garnish with fresh parsley or chives if desired.
  • Serve immediately.

Notes

The cooking time for salmon may vary depending on its thickness; adjust accordingly to ensure it's cooked through but still moist and flaky.
