  • 1.5 lbs Ripe Tomatoes Roma or vine-ripened, finely diced
  • 1/2 cup Fresh Basil chopped
  • 2-3 Garlic minced
  • 1/4 cup Extra Virgin Olive Oil good quality
  • 2 tablespoons Balsamic Glaze or Vinegar
  • Salt To taste
  • Black Pepper To taste (freshly ground)

Optional Additions

  • Red pepper flakes
  • 1 tablespoon finely grated Parmesan cheese

Instructions
 

Preparation

  • Wash and finely dice the ripe tomatoes, aiming for small, consistent pieces; then, place them into a medium-sized mixing bowl.
  • Gently tear or chop the fresh basil leaves and add them to the bowl with the diced tomatoes.
  • Finely mince the garlic cloves and add them to the tomato mixture, then season generously with salt and freshly ground black pepper.
  • Pour the extra virgin olive oil and balsamic glaze or vinegar over the tomato mixture.
  • Gently toss all the ingredients together until well combined, being delicate to avoid mashing the tomatoes.
  • For optimal flavor, cover the bowl and let the dip rest at room temperature for 15-30 minutes, allowing flavors to meld and deepen.

Notes

For an extra kick, add a sprinkle of red pepper flakes, or for added savoriness, stir in a tablespoon of finely grated Parmesan cheese.
