  • 2 cups Ripe Tomatoes finely diced (Roma or heirloom)
  • 1/2 cup Fresh Basil finely chopped
  • 2 cloves Garlic minced very finely
  • 1/4 cup Extra Virgin Olive Oil
  • 2 tablespoons Balsamic Glaze
  • 1/4 cup Feta Cheese crumbled
  • Salt to taste
  • Freshly Ground Black Pepper to taste

Preparation

  • In a medium bowl, combine finely diced tomatoes and finely minced garlic.
  • Gently fold in the finely chopped fresh basil.
  • Pour in balsamic glaze and sprinkle in crumbled feta cheese.
  • Drizzle with olive oil, then season with salt and pepper to taste.
  • Stir all ingredients until well combined, then marinate at room temperature for 15-20 minutes.
  • Transfer the dip to a serving bowl for presentation with your preferred accompaniments.

Notes

This dip is best served fresh but can be refrigerated for up to 2 days. The flavors will deepen over time. Enjoy with toasted bread, crackers, or fresh vegetables.
