Overnight Oats

  • 1/2 cup rolled oats (gluten-free if needed)
  • 1 tbsp chia seeds
  • 3/4 cup unsweetened almond milk
  • 1/2 cup mixed berries (fresh or frozen)
  • 1/4 tsp vanilla extract
  • 1 tsp maple syrup or honey Optional
  • 1 tbsp chopped almonds Optional topping

Instructions
 

Preparation

  • In a jar or container, combine rolled oats, chia seeds, unsweetened almond milk, vanilla extract, and optional maple syrup or honey.
  • Stir thoroughly to ensure all ingredients are well mixed and the chia seeds are not clumped.
  • Gently fold in the mixed berries.
  • Cover and refrigerate overnight, or for at least 4 hours, until the oats soften and the mixture thickens.
  • Before serving, stir well and top with chopped almonds if desired. Enjoy cold.

Notes

For thicker oats, add more chia seeds. For a thinner consistency, add a splash more milk before serving. Adjust sweetness to your preference with maple syrup or honey.
