Ingredients
  

Cookies

  • 1 cup unsalted butter, softened
  • 1/2 cup granulated sugar
  • 1 1/4 cups brown sugar, packed
  • 2 large eggs
  • 2 teaspoons vanilla extract
  • 2 1/2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 cup freeze-dried strawberries, crushed
  • 1 1/2 cups semi-sweet chocolate chips

For the Drizzle

  • 1/2 cup semi-sweet or dark chocolate chips
  • 1 teaspoon coconut oil optional, for gloss

  • Fresh strawberries halved or sliced

Instructions
 

Preparation

  • Preheat the oven to 375°F (190°C) and line baking sheets with parchment paper.
  • In a large bowl, cream together the softened butter, granulated sugar, and brown sugar until light and fluffy.
  • Beat in the eggs one at a time, incorporating each well before adding the next, then stir in the vanilla extract.
  • In a separate medium bowl, whisk together the flour, baking soda, and salt.
  • Gradually add the dry ingredients to the wet ingredients, mixing on low speed until just combined without overmixing.
  • Gently fold in the crushed freeze-dried strawberries and the 1 1/2 cups of chocolate chips.

Baking

  • Drop rounded tablespoons of dough onto the prepared baking sheets, ensuring they are spaced about 2 inches apart.
  • Bake for 9-11 minutes, or until the edges are golden brown and the centers are still slightly soft.
  • Let the cookies cool on the baking sheets for 5 minutes before transferring them to a wire rack to cool completely.

Drizzle and Garnish

  • In a microwave-safe bowl, combine 1/2 cup chocolate chips and optional coconut oil; microwave in 30-second intervals until melted and smooth.
  • Once cookies are cool, drizzle the melted chocolate over them with a spoon or piping bag; if desired, immediately place a small piece of fresh strawberry on top.
  • Allow the chocolate drizzle to set before serving, which can be expedited by refrigerating the cookies.

Notes

For best results, ensure your butter is genuinely softened but not melted. The freeze-dried strawberries add an intense berry flavor; make sure they are finely crushed for even distribution. Do not overbake the cookies to keep them soft and chewy. If you don't have an electric mixer, you can cream the butter and sugars by hand, it will just take a bit more effort.
