  • 2-3 lbs boneless, skinless chicken breasts or thighs
  • 1-2 fresh lemons zest and juice
  • 2 tablespoons fresh rosemary, chopped (or 2 teaspoons dried)
  • 2 tablespoons fresh thyme, chopped (or 2 teaspoons dried)
  • 1 tablespoon fresh parsley, chopped (or 1 teaspoon dried)
  • 4-5 cloves garlic, minced
  • 1/2 cup low-sodium chicken broth
  • 2 tablespoons extra virgin olive oil
  • 1 tablespoon cornstarch (optional, for thickening)
  • Salt and black pepper to taste

  • Pat the chicken dry and season generously with salt and pepper on both sides.
  • In a small bowl, whisk together the lemon zest, lemon juice, rosemary, thyme, parsley, minced garlic, olive oil, and chicken broth.
  • Place the seasoned chicken into the slow cooker and pour the lemon-herb mixture over it.
  • Cook on LOW for 3-4 hours or on HIGH for 2-3 hours until the chicken is tender and cooked through (165°F/74°C).
  • Once cooked, you can shred the chicken in the slow cooker or remove it to serve whole.
  • If a thicker sauce is desired, remove the chicken, whisk cornstarch with 2 tablespoons of hot liquid, and stir the slurry back into the sauce. Cook on HIGH for another 15-20 minutes until thickened.
  • Return the chicken to the slow cooker or pour the thickened sauce over the chicken and serve hot.

Notes

The cooking time may vary based on your slow cooker model and the thickness of the chicken pieces. Always ensure the chicken reaches an internal temperature of 165°F for safety.
