Ultimate Homemade Chicken Lo Mein

Ingredients
  

Chicken Marinade

  • 1 lb boneless, skinless chicken breasts or thighs, thinly sliced
  • 1 tbsp soy sauce
  • 1 tsp cornstarch
  • 0.5 tsp sesame oil

Noodles

  • 1 lb fresh or dried Lo Mein noodles

Sauce

  • 0.5 cup chicken broth
  • 0.25 cup soy sauce
  • 2 tbsp oyster sauce optional
  • 1 tbsp dark soy sauce for color, optional
  • 1 tbsp hoisin sauce
  • 1 tbsp granulated sugar
  • 1 tsp sesame oil
  • 1 tsp cornstarch

Stir-fry

  • 2 tbsp vegetable oil
  • 3 cloves garlic, minced
  • 1 tbsp fresh ginger, grated or minced
  • 1 medium onion, thinly sliced
  • 2 cups mixed stir-fry vegetables e.g., shredded carrots, snap peas, bell peppers, shiitake mushrooms, broccoli florets, napa cabbage

Garnish

  • 2 green onions, sliced

Instructions
 

Marinate Chicken

  • Combine sliced chicken with soy sauce, cornstarch, and sesame oil in a bowl, then toss to coat. Marinate for 15-30 minutes.

Cook Noodles

  • Boil salted water and cook Lo Mein noodles according to package directions until al dente. Drain, rinse with cold water, and toss with a drizzle of sesame oil.

Prepare Sauce

  • Whisk together chicken broth, soy sauce, oyster sauce (optional), dark soy sauce (optional), hoisin sauce, sugar, sesame oil, and cornstarch until smooth.

Stir-fry Chicken

  • Heat 1 tablespoon of vegetable oil in a wok over high heat. Cook chicken for 2-3 minutes per side until browned and cooked through, then remove and set aside.

Sauté Aromatics & Vegetables

  • Add the remaining 1 tablespoon of vegetable oil to the wok. Stir-fry minced garlic and grated ginger for 30 seconds until fragrant, then add sliced onion and stir-fry for 1-2 minutes until slightly softened.

Add Veggies

  • Add mixed stir-fry vegetables to the wok and stir-fry for 3-5 minutes until crisp-tender.

Combine Everything

  • Return the cooked chicken and drained noodles to the wok. Re-whisk the sauce and pour it evenly over the noodles and vegetables.

Toss and Finish

  • Using tongs, constantly toss all ingredients for 1-2 minutes until everything is thoroughly coated and the sauce thickens slightly.

Serve

  • Transfer to serving bowls and garnish with sliced green onions before serving immediately.

Notes

For extra flavor, consider marinating the chicken overnight. Customize your lo mein with your favorite stir-fry vegetables. If you don't have a wok, a large skillet will work just as well.
