For Crispy Chicken Bites

  • 1 lb boneless, skinless chicken breasts or thighs cut into 1-inch pieces
  • 1/2 cup all-purpose flour
  • 1/4 cup cornstarch
  • 1 tsp baking powder
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1/2 cup cold water
  • Vegetable oil for frying

For Tangy Chicken Skewers

  • 1 lb boneless, skinless chicken breasts cut into 1-inch cubes
  • 1/4 cup soy sauce
  • 2 tbsp honey
  • 1 tbsp rice vinegar
  • 1 tsp grated fresh ginger
  • 1 clove garlic minced
  • red pepper flakes optional
  • Wooden or metal skewers if wooden, soak for 30 minutes

For Creamy Chicken Dip

  • 2 cups cooked shredded chicken
  • 8 oz cream cheese softened
  • 1/2 cup mayonnaise
  • 1/4 cup finely chopped green onions
  • 1 tbsp hot sauce or to taste
  • 1/2 cup shredded cheddar cheese
  • Salt and pepper to taste
  • Crackers, tortilla chips, or veggie sticks for serving

Instructions
 

For Crispy Chicken Bites

  • Whisk together flour, cornstarch, baking powder, salt, and pepper in a medium bowl, then gradually add cold water to form a smooth batter.
  • Add chicken pieces to the batter and toss to coat thoroughly.
  • Heat vegetable oil to 350°F (175°C) in a large pot or deep skillet.
  • Carefully drop chicken pieces into the hot oil, frying for 5-7 minutes until golden brown and cooked through.
  • Remove chicken with a slotted spoon, drain on a wire rack, and season with salt if desired.

For Tangy Chicken Skewers

  • Whisk together soy sauce, honey, rice vinegar, ginger, minced garlic, and red pepper flakes in a shallow dish, then marinate chicken cubes for 30 minutes to 2 hours in the refrigerator.
  • Preheat grill to medium-high heat or oven to 400°F (200°C), then thread chicken onto skewers and discard excess marinade.
  • Grill skewers for 8-10 minutes, turning occasionally, or bake for 15-20 minutes, flipping once, until cooked through.

For Creamy Chicken Dip

  • In a large bowl, combine softened cream cheese and mayonnaise, mixing until smooth.
  • Stir in shredded cooked chicken, green onions, and hot sauce, then fold in shredded cheddar cheese.
  • Season with salt and pepper, then serve immediately or refrigerate, or bake for 20-25 minutes for a warm dip.

Notes

For best results, allow the chicken skewers to marinate for at least 30 minutes to absorb the flavors. If using wooden skewers, remember to soak them in water beforehand to prevent burning. The creamy chicken dip can be prepared ahead of time and reheated for a warm appetizer.
