  • 1/2 cup Rolled Oats not instant, for best texture
  • 1 cup Coconut Milk canned light or carton, for dairy-free option
  • 1 tbsp Chia Seeds for thickness and omega-3s
  • 1-2 tsp Maple Syrup to taste

Toppings

  • 1 tbsp Shredded Coconut toasted, for topping
  • 1/4 cup Diced Mango fresh or frozen and thawed, for topping
  • 1/4 cup Sliced Banana for topping

Instructions
 

Preparation

  • In a jar or small container with a lid, combine the rolled oats, coconut milk, chia seeds, and maple syrup, then stir well to ensure everything is mixed and the chia seeds are not clumping.
  • Place the lidded container in the refrigerator for at least 4 hours, or preferably overnight, to allow the oats and chia seeds to soak up the liquid and become creamy and thick.
  • In the morning, stir the mixture and add a splash more coconut milk if it is too thick, then add the toasted shredded coconut, diced mango, and sliced banana just before serving.

Notes

For an extra tropical flavor, add a squeeze of lime juice before serving. You can also experiment with other fruits like pineapple or passion fruit.
