Tropical Overnight Oats

Ingredients
  

Overnight Oats

  • 1/2 cup rolled oats
  • 1/2 cup coconut milk (or other non-dairy milk)
  • 1 tablespoon chia seeds
  • 1-2 teaspoons maple syrup (or agave)
  • 1/4 cup fresh mango finely diced
  • 1 tablespoon shredded coconut
  • 1/2 teaspoon lime juice

Optional Toppings

  • fresh mango extra
  • shredded coconut extra

Instructions
 

Preparation

  • Combine rolled oats, coconut milk, chia seeds, maple syrup, diced mango, shredded coconut, and lime juice in a jar or airtight container.
  • Stir all ingredients until well combined.
  • Secure the lid and refrigerate for at least 4 hours, or preferably overnight.
  • In the morning, give it a quick stir and add a splash more coconut milk if too thick.

Serving

  • Top with extra fresh mango and shredded coconut if desired, and enjoy your tropical overnight oats.

Notes

For best results, prepare the oats the night before to allow them to fully absorb the liquid and flavors. You can adjust the sweetness to your liking by adding more or less maple syrup.
