Main Ingredients

  • 4-5 lbs Cooked Brisket Point
  • BBQ Rub (as needed)
  • 1 cup Kansas City-style BBQ Sauce
  • 1/4 cup Apple Cider Vinegar
  • 2 tablespoons Brown Sugar (optional)
  • 4 tablespoons Butter (optional)
  • Smoking Wood (oak, hickory, or pecan)

Instructions
 

Preparation

  • Trim excess firm fat from the fully cooked and rested brisket point.
  • Cut the brisket point into 1 to 1.5-inch cubes.

Seasoning & Smoking

  • Place the cubed brisket in a disposable aluminum pan and lightly dust with BBQ rub if desired.
  • Combine Kansas City-style BBQ sauce, apple cider vinegar, and optional brown sugar.
  • Pour half of the sauce mixture over the brisket cubes, toss to coat, and add butter if using.
  • Return the pan to a preheated smoker at 250-275°F.
  • Smoke for 2-3 hours, stirring and basting with the remaining sauce every 45-60 minutes until caramelized and tender.

Rest & Serve

  • Remove the burnt ends from the smoker and let them rest in the pan for 10-15 minutes before serving.

Notes

For best results, use good quality cooked brisket. Adjust the amount of BBQ rub and brown sugar to your taste. The resting period is crucial for the sauces to fully absorb, making the burnt ends extra juicy and flavorful.
