Ingredients
  

Wet Ingredients

  • 3-4 medium ripe bananas
  • 2 large eggs
  • 1/4 cup melted coconut oil (or unsalted butter)
  • 1/4 cup maple syrup (or honey)
  • 1 tsp vanilla extract

Dry Ingredients

  • 1 1/2 cups whole wheat flour (or all-purpose flour)
  • 1 tsp baking soda
  • 1/2 tsp cinnamon

Instructions
 

Preparation

  • Preheat oven to 350°F (175°C), then line or grease a 9x5 inch loaf pan.
  • In a large bowl, mash ripe bananas thoroughly with a fork until mostly smooth.

Mixing

  • Add eggs, melted coconut oil, maple syrup, and vanilla extract to the mashed bananas and whisk until combined.
  • In a separate bowl, whisk together whole wheat flour, baking soda, cinnamon, and salt.
  • Pour dry ingredients into wet ingredients and gently fold until just combined, being careful not to overmix.

Baking & Cooling

  • Pour batter into the prepared loaf pan and spread evenly, then bake for 50-60 minutes, or until a wooden skewer comes out clean.
  • Cool in the pan for 10-15 minutes, then transfer to a wire rack to cool completely.

Notes

For extra flavor, you can add a handful of chocolate chips or chopped nuts to the batter. Store leftover banana bread at room temperature in an airtight container for up to 3 days, or freeze for longer storage.
