Ingredients
  

Salmon

  • 1.5 lbs salmon fillets skin on or off

Marinade & Glaze

  • 1/2 cup brown sugar light or dark
  • 1/2 cup low sodium soy sauce or gluten-free tamari
  • 2 cloves garlic minced
  • 1 tablespoon fresh ginger grated or finely minced
  • 1 tablespoon rice vinegar
  • 1 teaspoon sesame oil

Instructions
 

Marinade Preparation

  • In a medium bowl, whisk together brown sugar, soy sauce, minced garlic, grated ginger, rice vinegar, and sesame oil until the sugar dissolves to create your marinade and glaze base.

Marinating the Salmon

  • Place salmon fillets in a shallow dish or resealable bag. Pour half of the marinade over the salmon, ensuring even coating, and marinate for 15-20 minutes at room temperature or up to 30 minutes in the refrigerator, reserving the remaining marinade for the sauce.

Preheat Oven

  • Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper or aluminum foil for easy cleanup.

Baking the Salmon

  • Remove salmon from the marinade, place on the baking sheet, and bake for 12-18 minutes until cooked through and flaky, reaching an internal temperature of 145°F (63°C).

Prepare the Glaze

  • While salmon bakes, pour the reserved marinade into a small saucepan and simmer over medium heat for 3-5 minutes, stirring occasionally, until it thickens slightly into a syrupy glaze without burning.

Serving

  • Transfer cooked salmon to plates, drizzle generously with the warm glaze, and garnish with sesame seeds and chopped green onions if desired; serve immediately with your preferred sides.

Notes

For crisper skin, ensure your salmon fillets are patted dry before marinating.
