Pudding

  • ½ cup chia seeds
  • 2 cups almond milk
  • ¼ cup fresh orange juice
  • 2 tablespoons maple syrup
  • 1 teaspoon vanilla extract
  • salt Pinch of

Garnish (Optional)

  • orange zest Zest of ½ an orange, for garnish
  • Fresh berries for topping

Preparation

  • In a medium bowl, combine the chia seeds, almond milk, orange juice, maple syrup, vanilla extract, and a pinch of salt.
  • Whisk thoroughly to ensure all ingredients are well combined and there are no clumps.
  • Cover the bowl and refrigerate for at least 2 hours, or preferably overnight, to allow the pudding to thicken.

Serving

  • Before serving, stir the chia pudding; if it's too thick, add a splash more almond milk to reach desired consistency.
  • Divide the pudding into individual serving bowls or jars.
  • Garnish with fresh orange zest and berries, if desired, then serve chilled.

Notes

For best results, prepare this chia pudding the night before to allow it to thicken completely.
