Equipment

  • Large Bowl
  • Electric Mixer
  • Medium Bowl
  • Whisk
  • Small Bowl
  • Parchment-lined Baking Sheet
  • Toothpick or Knife
  • Wire Rack

Ingredients

Cookie Dough

  • 8 ounces unsalted butter softened
  • 1.5 cups granulated sugar
  • 4 ounces block cream cheese softened (divided)
  • 1 large egg
  • 2 teaspoons vanilla extract

Dry Ingredients

  • 3 cups all-purpose flour
  • 2 teaspoons baking powder
  • 0.5 teaspoon salt

Cheesecake Swirl & Jam

  • 4 ounces block cream cheese softened (remainder)
  • 0.5 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 0.75 cup strawberry jam or preserves

Instructions

Prepare Cookie Dough

  • In a large bowl, beat the softened butter, granulated sugar, and 4 ounces of cream cheese until light and fluffy using an electric mixer. Then, beat in the egg and 1 teaspoon of vanilla extract until well combined.

Combine Dry and Wet Ingredients

  • In a separate bowl, whisk together the flour, baking powder, and salt. Gradually add these dry ingredients to the wet ingredients, mixing on low speed until just combined to form the cookie dough.

Prepare Cream Cheese Swirl

  • In a small bowl, whisk together the remaining 4 ounces of softened cream cheese, powdered sugar, and 1 teaspoon of vanilla extract until smooth and creamy.

Assemble and Swirl

  • Drop spoonfuls of cookie dough onto a parchment-lined baking sheet and make a small indentation in the center of each. Fill this indentation with about half a teaspoon of the cream cheese filling, then dollop a small amount of strawberry jam over it, swirling the jam and cream cheese slightly with a toothpick or knife.

Bake and Cool

  • Bake in a preheated 350°F (175°C) oven for 10-12 minutes, or until the edges are lightly golden and the centers are just set. Allow them to cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.

Notes

For best results, ensure all dairy ingredients are at room temperature. Do not overmix the cookie dough, as this can lead to tough cookies. You can experiment with different jam flavors for a personalized touch.
