Spooky Jack-o'-Lantern Quesadillas

  • 8 count Large flour tortillas taco or burrito size
  • 2 cups shredded cheddar cheese or Mexican blend
  • 1 cup cooked and seasoned ground beef or shredded chicken, or black beans), optional
  • 1 tablespoon olive oil or butter

Preparation

  • Lay half of the tortillas on a cutting board and cut out jack-o'-lantern faces using a sharp knife or cookie cutters for the top layers.
  • Heat a large skillet or griddle over medium heat, then add a drizzle of olive oil or a pat of butter.

Cooking Quesadillas

  • Place one whole tortilla in the heated skillet and sprinkle with 1/4 to 1/2 cup of shredded cheese, leaving a small border.
  • If desired, spoon 2-3 tablespoons of filling over the cheese, then carefully place a carved Jack-o’-Lantern tortilla on top.
  • Cook for 2-3 minutes until the bottom is golden brown and cheese melts, then gently flip and cook for another 2-3 minutes until golden and gooey.
  • Remove the cooked quesadilla and repeat with remaining tortillas and filling, then serve warm with optional dipping sauces.

Notes

For extra flavor, season your ground beef or chicken with taco seasoning. You can also experiment with different cheese blends. For a vegetarian option, use black beans seasoned with cumin and chili powder. Be careful when flipping the quesadillas to keep the filling inside.
