  • 4 large flour tortillas
  • 4 large eggs, scrambled and seasoned
  • 1/2 cup cooked sausage crumbles or diced ham
  • 1/4 cup diced jalapeños (fresh or pickled)
  • 1/4 cup canned black beans, rinsed and drained
  • 1/4 cup frozen corn, thawed
  • 1/2 cup shredded pepper jack cheese
  • 2 tablespoons butter or oil, for cooking and browning

Instructions
 

Preparation

  • Scramble eggs and season them with salt and pepper.
  • Cook sausage crumbles or dice ham if using, and combine diced jalapeños, black beans, and thawed corn.

Assembly

  • Warm each flour tortilla in a dry skillet or microwave until pliable.
  • Sprinkle a thin layer of shredded pepper jack cheese on one side of each warm tortilla, leaving an inch clear around the edges.
  • Place a portion of scrambled eggs, sausage/ham, and the jalapeño/bean/corn mixture in a horizontal line near one edge of the tortilla.
  • Top the fillings with additional shredded pepper jack cheese.
  • Fold the short sides of the tortilla inward, then tightly roll the tortilla from the edge closest to the filling.

Cooking and Serving

  • Heat butter or oil in a skillet and cook the rolled tortillas seam-side down for 2-3 minutes per side until golden brown and the cheese is melted.
  • Slice each roll-up in half diagonally if desired and serve warm with optional salsa, sour cream, or avocado slices.

Notes

For an extra kick, add a pinch of cayenne pepper to the egg mixture. You can prepare the fillings ahead of time for a quicker breakfast assembly.
