  • 1 pound spicy breakfast sausage
  • 1 red bell pepper diced
  • 1 green bell pepper diced
  • 1/2 onion diced
  • 8 large eggs
  • 1 cup milk
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/4 teaspoon cayenne pepper or more, to taste
  • 4 ounces shredded Monterey Jack cheese
  • 4 ounces shredded sharp cheddar cheese
  • Cooking spray or butter for greasing

Preparation

  • Preheat your oven to 375°F (190°C) and lightly grease a 9x13 inch baking dish.
  • In a large skillet, cook the spicy breakfast sausage over medium-high heat until it's no longer pink, then drain excess grease and transfer to the prepared baking dish.
  • Using the same skillet, sauté the diced red bell pepper, green bell pepper, and onion for 5-7 minutes until tender-crisp, then spread them evenly over the sausage.
  • In a large bowl, whisk together the eggs, milk, salt, black pepper, and cayenne pepper until well combined.

Assembly and Baking

  • Evenly sprinkle both Monterey Jack and sharp cheddar cheeses over the sausage and vegetable mixture in the baking dish.
  • Carefully pour the whisked egg mixture over all the ingredients in the baking dish, ensuring everything is as coated as possible.
  • Bake the casserole uncovered for 40-50 minutes, or until it is set in the center, golden brown on top, and a knife inserted comes out clean.

Serving

  • Allow the casserole to rest for 5-10 minutes before slicing and serving.
  • Garnish with fresh cilantro or green onions if desired.

Notes

This casserole can be assembled the night before and baked in the morning for a quick and easy breakfast. Cover and refrigerate overnight, then add about 10-15 minutes to the bake time.
