Ingredients
  

Main Ingredients

  • 6-8 parathas
  • 4 large eggs
  • 1 cup crumbled paneer
  • 1 small onion
  • 2 green chilies
  • 1/2 teaspoon turmeric powder
  • 1/2 teaspoon garam masala
  • 1 handful fresh coriander (cilantro)
  • Salt to taste
  • Black pepper to taste
  • Oil or Ghee for cooking
  • Mint chutney or sriracha Optional: for serving

Instructions
 

Paneer & Egg Mixture

  • Whisk eggs with salt, pepper, turmeric, and garam masala in a bowl. Add chopped onion, green chilies, crumbled paneer, and coriander, then mix well.

Cook the Filling

  • Heat a non-stick pan with oil or ghee. Pour the mixture into the pan and scramble or cook as a thick omelet until the egg is set and paneer is warm; avoid overcooking.

Warm Parathas

  • While the filling cooks, warm the parathas on a separate hot skillet according to package directions until soft and golden.

Assemble the Wraps

  • Lay a warm paratha flat and spoon a generous amount of the paneer and egg mixture onto its center.

Roll and Serve

  • Optionally, add a drizzle of mint chutney or sriracha, then roll the paratha tightly and serve immediately.

Notes

You can adjust the spice level by adding more or fewer green chilies. For a richer flavor, use ghee instead of oil to cook the filling and warm the parathas.
