Spicy Korean BBQ Pulled Beef

Main Ingredients

  • 3-4 pounds boneless beef chuck roast
  • 1 tablespoon olive oil
  • 1 large onion chopped
  • 3-4 cloves garlic minced
  • 18 ounces BBQ sauce about 1 ¾ cups your favorite
  • 1 cup beef broth
  • 1 tablespoon apple cider vinegar
  • 1 teaspoon smoked paprika
  • ½ teaspoon black pepper
  • Salt to taste

Spicy Korean BBQ Sauce

  • 2 tbsp gochujang
  • 1 tbsp soy sauce
  • 1 tsp sesame oil
  • 1 tsp honey
  • 1 grated garlic clove for flavor variation
  • 1 grated ginger for flavor variation

Garnish

  • Green onions for garnish

Instructions
 

Preparation

  • Pat the chuck roast dry and season generously with salt and pepper.
  • Heat olive oil in a skillet over medium-high heat and sear the beef for 3-4 minutes per side until browned.
  • Remove beef, then sauté chopped onion in the same skillet for 3-5 minutes, adding minced garlic for another minute until fragrant.

Slow Cooking

  • Transfer seared beef, sautéed onions, and garlic to a crockpot.
  • Whisk together BBQ sauce, beef broth, apple cider vinegar, smoked paprika, and black pepper, then pour over the beef.
  • Cover and cook on "Low" for 6-8 hours until the beef is tender.
  • Remove beef from crockpot, shred with two forks, discarding any fat, and return to the crockpot.

Finishing Touches

  • Stir the shredded beef into the cooking liquid and let it sit on "Warm" for 15-30 minutes to absorb the sauce; taste and add salt if needed.
  • In a small saucepan, combine gochujang, soy sauce, sesame oil, honey, grated garlic, and grated ginger, then heat until warm.
  • Mix the warmed Korean BBQ sauce with a portion of the shredded beef.
  • Garnish with green onions before serving.

Notes

For extra tenderness, cook an additional hour on low. Adjust gochujang for desired spice level. This recipe is also great for meal prepping and can be stored in the fridge for up to 4 days.
