Spicy Chicken & Black Bean Grilled Cheese Burrito

This Spicy Chicken & Black Bean Grilled Cheese Burrito combines seasoned shredded chicken, black beans, corn, and cheese inside a tortilla, grilled to crispy perfection with a mayonnaise coating.

Ingredients
  

Main Ingredients

  • 1 large flour tortilla
  • 1 cup shredded cooked chicken seasoned with chili powder, cumin, and a pinch of cayenne pepper
  • 1/4 cup black beans, rinsed and drained
  • 1/4 cup corn kernels
  • 1/2 cup shredded Monterey Jack cheese
  • 2 tablespoons mayonnaise for grilling

Optional Ingredients

  • 1 tablespoon diced jalapeƱos fresh or pickled
  • 1 tablespoon chopped fresh cilantro
  • dipping sauce salsa, sour cream, chipotle mayo

Instructions
 

Preparation

  • Season cooked chicken with chili powder, cumin, and cayenne, then ensure all fillings are heated and drained.
  • Lay the tortilla flat and sprinkle half of the Monterey Jack cheese down the center, leaving space at the edges.
  • Distribute the seasoned chicken, black beans, corn kernels, and optional jalapeƱos over the cheese.
  • Sprinkle the remaining cheese and optional cilantro over the fillings.
  • Fold in the two shorter sides of the tortilla, then roll it up tightly from the bottom to create a sealed burrito.

Grilling

  • Heat a non-stick skillet over medium heat and spread mayonnaise on one side of the rolled burrito.
  • Place the burrito mayonnaise-side down in the skillet and cook for 3-5 minutes until golden brown and crispy.
  • Spread mayonnaise on the top side of the burrito, then flip and cook for another 3-5 minutes until golden and the cheese is melted.
  • Remove the Grilled Cheese Burrito from the pan, let it rest for a minute, and then slice in half diagonally if desired.

Notes

For an extra crispy exterior, lightly press down on the burrito with a spatula while grilling. Experiment with different cheese varieties or add a smoky flavor with a pinch of smoked paprika to the chicken seasoning.
